* 5 egg yolks, beaten
* 1 (14 ounce) can sweetened condensed milk
* 1/2 cup key lime juice
* 1 (9 inch) prepared graham cracker crust


1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked graham cracker shell.
3. Bake in preheated oven for 15 minutes. Allow to cool. Top with whipped topping and garnish with lime slices if desired. The key lime pie recipe is ready...enjoy it !

* 8 (approx. 3 1/2-inch size) frozen tart shells (mini pie shells)
* 3 large eggs
* 1 cup granulated sugar
* 3 tablespoons all-purpose flour
* 3 tablespoons key lime juice, fresh or bottled
* 1 to 1 1/2 tablespoons finely grated lemon or lime zest
* dash salt
* whipped cream or whipped topping
* lime slices, strawberries, or other sliced fruits, for garnish

Place tart shells on a baking sheet and bake at 325° for about 6 minutes.

Meanwhile, Whisk together the eggs, sugar, flour, key lime juice, zest, and salt. Spoon or ladle filling into the partially baked shells. Bake until custard is set, about 25 to 30 minutes.

Cool completely or serve slightly warm with ice cream or whipped cream. A few ripe blackberries or strawberries make a pretty garnish for this dessert. The key lime pie ready ! Nice one ! Enjoy !

Key Lime Pie Recipe Ingredients:

* 1/2 cup key lime juice, fresh if possible
* 1/2 cup heavy whipping cream
* 1 can (14 ounces) sweetened condensed milk
* 1 to 2 teaspoons finely grated lime or key lime zest, divided
* 5 egg yolks
* whipped cream or whipped topping, optional
* 1 graham cracker pie shell
* Meringue (optional)
* 3 to 4 egg whites
* 6 tablespoons sugar
* 1/2 teaspoon cornstarch
* dash salt

Key Lime Pie Recipe Instructions :
Whisk sweetened condensed milk with the egg yolks. Stir in whipping cream and key lime juice. Stir in 1 to 1 1/2 teaspoons lime zest. Pour into a prepared graham cracker crust and bake at 325° for 15 to 20 minutes. Remove from oven and increase temperature to 350° if meringue is used. If you aren't making the meringue, cool the pie and top with whipped cream and a little lime zest just before serving.

Meanwhile, make meringue, if using. In a glass or stainless steel bowl, beat egg whites until soft peaks form. Combine sugar, cornstarch, and salt; gradually beat into the egg whites. Continue beating until egg whites no longer feel gritty (with sugar)when a little is smeared between two fingers. Spoon onto the hot pie filling, spreading to cover completely to the crust. Put back in the oven and bake at 350° until meringue is browned, about 12 to 15 minutes. The key lime pie recipe is ready to serve..enjoy the pie !

* 1/2 cup fresh lime juice (12 to 15 key limes or 3 to 4 common limes)
* 4 teaspoons grated lime zest
* 4 egg yolks
* 1 - 14 ounce can sweetened condensed milk
* 11 graham crackers
* 3 tablespoons granulated sugar
* 5 tablespoons unsalted butter, melted


1. Whisk the egg yolks and lime zest together in a bowl until tinted light green. This takes about 2 minutes
2. Beat in milk, then juice and set aside at room temperature till it thickens.
3. Preheat oven to 325 degrees.
4. Mix graham cracker crumbs and sugar in another bowl.
5. Add butter and stir with a fork until well blended.
6. Pour this mixture into a 9-inch pie pan and press over the bottom and up the sides of the pan. Try using the bottom of a measuring cup to make sure the graham cracker mixture forms a firm crust on the bottom of the pie pan.
7. Bake on the center rack for about 15 minutes until the crust is lightly brown, remove and let cool to room temperature.

8. Pour the lime filling into crust, spread evenly, and then bake for 15 minutes until the center sets, but still wiggles when shaken.

9. Remove from oven and cool to room temperature.

10. Refrigerate for at least three hours until well chilled.

Some of you might like to serve it with a whipped cream topping or a meringue topping, but I prefer keeping it simple. If the pie seems to be sticking to the pan when serving, try dipping the pan into a bowl of warm water to loosen it. The key lime pie recipe is ready to serve...enjoy !

  • 16 graham crackers, crushed
  • 3 tablespoons sugar
  • 1 cube (1/4 lb) margarine or butter
  • 4 large or extra large egg yolks
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup fresh key lime juice (approximately 12 Key limes)
  • 2 teaspoons grated lime peel, green portion only
Whipping Cream For Garnish (Optional)
  • 1/2 cup whipping cream
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon vanilla

Mix the ingredients and press them into a 9" pie plate. Bake in a preheated 350F oven for 10 - 12 minutes until lightly browned. Place on a rack to cool.

Pie Filling
Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.

If you are using the whipping cream garnish, prepare the cream. The key lime pie recipe is ready to serve with a dollop of whipped cream.
